Paneer kofta curry (White Sauce Based)
Ingredients:
For koftas:
1 cup grated paneer
1 potato par boiled
3-4 green chillies paste
Salt to taste
1 tsp maida
1 tbsp corn flour
1 tsp Ginger-garlic
paste
1 tsp black pepper(Kali
mirch)
For curry:
2 tsp maida
2 tbsp butter
1/2 cup onion finely
chopped(Can also be grounded to paste)
8-10 cloves of
garlic(finely chopped)
2 cups Milk
Salt to taste
5-6 green chillies paste
Black pepper to taste
2 tsp tomato sauce
Cooking directions:
1. Mash the boiled potatoes a bowl. Mix all the ingredients
mentioned for the kofta except for corn flour.
2. Make small balls of the mixture. Now dip the
balls in corn flour mixture(1 tbsp corn flour mixed with 2 tbsp water) and deep
fry until the balls turn golden brown in color.
3. For gravy: Heat 1 tbsp butter in a non-stick
pan, add green chilies paste, finely chopped onions and garlic, roast it for
about 4-5 mins. Add maida and keep
frying until the rawness of Maida is
gone.
4. Add Milk to it and keep stirring so that no
lumps are formed.
5. (In case lumps are still found, use hand blender
and blend the sauce until the lumps are removed).
6. Now add tomato sauce and Salt, pepper to taste.
7. Bring it boil.
8. Just before serving add the koftas.
Tip: For koftas potatoes
should be par boiled and excess water should be drained. In the curry add black
pepper just to adjust the spicy flavor of it.
